DeAnna Lee's Creamy Chicken Taco Soup

On Sunday we had sunshine, snow, AND hail! Thank you Washington. If we don't like the weather, we know to wait around five minutes and it will change. Tomorrow the rain is back which means it's warming up, and hey we'll take it! 

To go with your rainy day, try this Creamy Taco Soup! It's not an all day soup. It's actually pretty quick and easy, so you could whip this up on a week night for the family. 

Creamy Chicken Taco Soup

1 tbs. olive oil 

2 chicken breasts seasoned with salt and pepper 

4 garlic cloves minced

1 onion diced 

1 bell pepper diced 

2 boxes of low sodium chicken stock

2 cans of white corn drained

2 cans of black beans drained (or YOUR favorite beans...any will work) 

1 can of Rotel 

2 chipotle peppers (optional)

1 packet of Ranch dressing seasoning

1 packet of Taco seasoning 

1 cup of cream cheese

1 lime

Toppings: (Mix and Match whatever is your favorite) 

cilantro

shredded cheese 

tortillas or tortilla chips 

sour cream 

hot sauce 

1. In a large stock pot or dutch oven heat a table spoon a olive oil and add the chicken breasts over medium high heat. Brown on both sides about 3 - 4 minutes each. The chicken will still be a little raw on the inside. That's ok, because you will cook it more later. Once it's browned remove from pot. Let cool and then cut into small bite size pieces. 

2. Saute the diced onions until they begin to soften. Then add the diced bell pepper and saute. Add the garlic and chipotle peppers.

3. Add the drained corn and beans plus add the can of Rotel. (Don't drain this... my husband did that once lol... bless it).

4. Now add the Ranch and taco seasoning then both boxes of chicken stock. 

5. Taste for seasoning. You should be good to go with both of those packets of ranch and taco, but if you need more go for it! 

6. Add the small bite size pieces of chicken to the pot along with the cream cheese and let simmer for 20 minutes. 

7. At the very end, squeeze fresh lime into the pot! 

Serve with your favorite toppings!
