DeAnna Lee's Sausage & Asparagus Frittata

I'm officially down 7 lbs. with 30/10 Weight Loss for Life! -- I make Sausage & Asparagus Frittatas and eat them for breakfast all week! I tweaked the 30/10 Weightloss for Live recipe by grilling everything first. Recipe below! 


Sausage and Asparagus Frittata

2 Iseirno Chicken Sausages
2 cups of asparagus (10- 12 stalks) 
2 green onions chopped
2 egss with yolks
4 egg whites only 
2 tbs. milk 
1/2 tsp. garlic powder
1/2 tsp. onion powder
2 tbsp. avocado oil
salt and pepper to taste 
Optional: Hot Sauce (We like it HOT)! --

1. Preheat oven to 400 degrees and preheat your grill to medium high heat. Also preheat a burner on the stove to medium. 

2. Grill sausages until almost done (they will continue cooking in the oven), chop into small pieces, and set aside. 

3. Put a little avocado oil and salt and pepper on the asparagus and grill asparagus for 3 - 4 minutes. Chop into bite size pieces. 

4. In a large bowl add the eggs, egg whites, milk, garlic powder, onion powder, salt, pepper, and hot sauce. Whisk together until fluffy. 

5. Add the chicken sausage and asparagus and mix together.

6. Heat a medium size oven proof skillet to medium heat. Add the avocado oil and heat. Add the egg mixture. With a spatula pull the egg from the edges of the skillet back to the middle. DO NOT MIX. You don't want scrambled eggs. When the egg begins to set transfer to the oven. 

7. Bake 15 minutes or until egg mixture no longer giggles in the pan. 

8. Place under broiler for a couple minutes to brown the top. This only takes a moment. Don't leave it alone.

Eat with an arugula salad with a light lemon dressing! OR just add more hot sauce and enjoy.

I will cut it up into six portions and eat it all week for breakfast!
