DeAnna Lee's Take on Popular Avocado Chicken Salad

After the holidays, I always feel fluffy! I try not to beat myself up over it. It's important to relax and induldge with family and friends during this time of year. But when the new year rolls around, I try to get my act together and start eating right again. This recipe is how I have started my slow path back to health and fitness for 2018! 

I found the recipe on Facebook from It has gone viral and for good reason; this recipe is SO GOOD! You get all the protein and bulk of the salad from the shredded chicken. The avocado brings all the fat and mouth feel that always makes food feel comforting. But with this recipe, it's all good fats! 

I changed up the recipe to suit my needs by adding garlic to the dressing and rocket lettuce (baby arugula) to the salad. I omitted the bacon, because I forgot to buy it at the store. But honestly you don't need the double meat. 

Even my husband loved this salad! This is the same guy that sings the Simpon's song, "you don't win friends with salad"! 



Avocado Chicken Salad 


2 chicken breasts

2 hard boiled eggs (cut in half)

2 ripe avocados

1 tbs. fresh dill

1 ear of corn (slice corn off the cob...yes, you can eat it raw!) 

2 cups rocket lettuce (baby arugula) 

3 green onions 



2 lemons

1 tbs. Dijon mustard

3 tbs. olive oil

1 minced fresh garlic clove 

salt and pepper to taste 


Preheat oven to 400 degrees. Place chicken on a sheet pan. Salt and pepper is really well and give it a little coat of olive oil. Bake chicken 20 minutes. 

Next hard boil your eggs. For the perfect egg, place eggs in cold water and place high heat on the stove. Bring to a boil, then quickly remove from heat. Let eggs sit for 5 mintues. Then run under cold water. You'll get the perfect egg EVERY. SINGLE. TIME! :) 

Using a knife remove the kernals of corn from the cob. Chop green onions, dill, and avocado into chunks. 

To make the dressing combine all ingredients and shake until emulcified. 

Combine the ingredients your favorite way! Then enjoy a very healthy dinner that you can feel good about all year long!
